An important place on the local table is lamb, horse meat, excellent local soups with lots of vegetables, dairy products and bread. Hot flatbread from the tandoor, fragrant pilaf, hearty Shurpa and melt in the mouth Samsa – are considered masterpieces of Uzbek cuisine!

Palov culture and tradition

There is a saying in Uzbekistan that guests can only leave their host’s house after palov has been offered. Palov is a traditional dish made and shared throughout rural and urban communities of Uzbekistan. It is prepared with ingredients such as rice, meat, spices and vegetables and in addition to be enjoyed as a regular meal, is served as a gesture of hospitality, to celebrate special occasions like weddings and new year, to help those in need who are underprivileged, or to honour loved ones who have passed away. Palov culture and tradition was inscribed in 2016 on the Representative List of the Intangible Cultural Heritage of Humanity.

Tasty Soups

Soups are very popular in Uzbekistan, even on the hottest of summer days.  A popular type of soup is a meat broth soup with big pieces of meat, very often fatty mutton. Its other ingredients comprise pieces of carrot and potato and of course a sprinkling of fresh herbs.  Among them are shurpa (chorba), mastava, ughra and different sour-milk soups. Shurpa known since the time of Abu Ali Ibn Sina (Avicenna) is considered a curative meal against many diseases.

Modern trends of the international wine market are solid support for the further development of the wine industry in Uzbekistan, located in the heart of Central Asia, which has a long history of winemaking, as well as having a developed wine school and regions with favourable natural conditions for growing grapes.
